Coffee has a long legacy within this family. Owner Shelby Balmer's coffee journey started many years ago while working as a barista in her Mother-in-Law's mobile coffee trailer based in Washington state. The coffee culture
was strong in the region - it provided a fantastic environment for her to learn the art and skills of the trade. Shelby worked the mobile coffee bar, serving customers and pulling Olympic Crest espresso blend through an Italian
Promac two-group espresso machine. After making the move to Florida, she saw an opportunity to bring some of the Washington coffee culture to the Sunshine State. Pines to Palms does just that. Inside the shop, you'll find
an environment perfect for work and study. The menu is designed to offer drinks appealing to all palates, and some drinks you won't find anywhere else in the area. They're just a half-mile off of 95 in Ormond - go check

Offering
Pines to Palms is serving up an awesome specialty coffee menu. You'll still find the standards - drips, lattes, mochas - but you can't miss out on the uniquities they offer. The Whitebark Pine is top of the list -
white coffee with a combination of white chocolate and vanilla. White coffee (learn more here)
is prepared from very lightly roasted beans. The minimal roasting process allows the coffee to retain much of the earthy and nutty flavor profiles natural to the bean. It's commonplace in the Pacific Northwest, but Pines to
Palms is one of the only places in Florida that you'll find serving it.
If you're not in the mood for coffee, you'll find energy mocktails, freshly prepared Italian Sodas, lemonades, and teas. Pines to Palms is also a fantastic place to bring the whole family. Shelby has taken time to develop a kid-friendly
Lil' Pines and Lil' Palms menu - something you won't find at many other coffee shops. As fun as the kids drinks sound, don't worry - there's no caffeine!

The Centerpiece: Promac Two-Group Green Plus
The Promac Two-Group Green Plus espresso machine keeps Pines to Palms serving all day. This particular machine traces its lineage back to Shelby's mother-in-law's mobile coffee trailer. After a 3,100-mile journey
across the United States, it found its new home behind the bar here and is pumping out shots as consistently as ever. Promac has been producing precision espresso machines for 40 years in their factory just outside
Milan, Italy.

Sourcing Style: Fair Trade, Organic
Roaster: Olympic Crest Coffee Roasters
As a throwback to the old coffee trailer, Pines to Palms' main source of beans is Olympic Crest - a roaster based just outside of Olympia, Washington. Olympic Crest has been roasting coffee and serving their
local area since 1996. They roast all beans through controlled temperature profiles on a Diedrich IR-12 roaster.
Olympic Crest specializes in espresso roasts, and Pines to Palms is serving up their South and Central American blend as the base for most drink offerings.
