Bio

Established: 2014
Owner Clay Cass and his wife Michelle started their coffee adventure around 2014, roasting at home in their laundry room as a hobby. The passion grew quickly - they moved their home roasting operation
to a larger space inside the Da Vinci Design Studio in DeLand. Over the next two years, Clay perfected his roasting craft and supplied freshly roasted coffee beans to customers through local farmers markets. In 2016, Trilogy's
current brick-and-mortar location was born. The three stories of Trilogy - I. Coffee, II. Company, and III. Community - keep them focused on their core vision. It starts with ensuring the coffee products are of the highest quality,
continues with developing and training staff to deliver customer service and experience at the highest standards, and concludes with stimulating and fostering an environment that the local community can enjoy. Trilogy sets the bar
high and continues to deliver for DeLand.
Offering
Trilogy serves a selection of freshly roasted coffees in a drip, pour over, or Chemex format. You can select from a range of roast profiles from a variety of regions, making it easy for you
to tailor your order to your preferences. They also offer a full range of espresso-based drinks. House-made Cold Brew and Nitro Cold Brew are on-tap behind the bar. In addition to coffee, Trilogy serves
up hot, iced, matcha, and chai teas. Their tea selection comes from Centro Tea Co., also based nearby in DeLand. You'll also find
that all of Trilogy's dairy is locally-sourced and all flavor syrups are house-made to maximize quality and freshness.
Trilogy also serves over 50 wholesale partners, so don't be surprised if you find their coffee while dropping in another spot around town!
Hardware
The Centerpiece: Slayer Two-Group
The Roaster: Diedrich IR-12
Trilogy is pulling shots through their Slayer two group head espresso machine. Slayer is a Seattle-based manufacturer that has been building espresso machines since 2007. Italian coffee equipment conglomerate saw the
value in Slayer and purchased the company in 2017. These machines are top-of-the-line, and allow ultimate control of both manual and automatic processes. What that means for you? It allows Trilogy to dial in their coffee
and deliver precise flavors in your cup. Back of the house, Trilogy is roasting up their beans in a Diedrich IR-12 roaster - another top-of-the-line piece of coffee equipment. Before roasting new beans in large batches on
the Diedrich, Clay uses an Ikawa small-batch sample roaster to determine the best flavors to bring out in the roast. This method allows for a "rapid prototyping" approach to the coffee, and ensures the full potential of
the beans is realized before roasting in volume for the shop and their wholesale partners.

Trilogy responsibly sources all green coffee for the roastery, and strives for the highest levels of transparency within the supply chain. Colombian beans hold a place on the menu all year round and act as the basis for
the shop's espresso blend. Trilogy rotates in other regional offerings from all over the world throughout the year based on seasonal availability of the coffee beans.
